For the LOVE of Lentil Soup

I discovered my love of lentil soup at Sahara in New Brunswick, a Rutgers interview and event classic, and one of my favorite places to meet friends. It’s also one of my favorite local restaurants and just a 10 minute walk from the Art Library and my office.

Lentils have been eaten for thousands of years, with evidence of their use dating back to 8000 BC in Greece, Syria, and the Jericho region. They were valued in ancient Greece and Egypt, and recipes for lentil soup appeared in Roman cuisine as early as the 1st century AD.
